Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4 (makes about 8 pancakes)

Ingredients:
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract
Instructions:
  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, whisk buttermilk, egg, melted butter, and vanilla.
  3. Gently mix wet and dry ingredients until just combined (lumps are fine). Let rest 5 minutes for extra fluffiness.
  4. Heat a buttered nonstick skillet or griddle over medium heat. Pour ¼ cup batter per pancake. Cook until bubbles form and edges are set (2–3 minutes), then flip and cook another 1–2 minutes.
  5. Serve warm.

Serving Suggestions:
  • Classic: Serve with a pat of butter and warm maple syrup.
  • Cozy twist: Top with cinnamon sugar, a drizzle of honey, or vanilla yogurt.
  • Fruit lovers: Add a side of sautéed apples, fresh berries, or banana slices.
  • Special touch: Garnish with a dollop of whipped cream and a dusting of cinnamon for a café-style breakfast.
  • For kids: Add chocolate chips to the batter and top with whipped cream and sprinkles!
Tips for Best Results:
  • Don't overmix: Stir just until the batter comes together — overmixing can make the pancakes dense.
  • Rest the batter: Let it sit for a few minutes before cooking to activate the leavening agents and create fluffier pancakes.
  • Keep warm: Place cooked pancakes on a baking sheet in a 200°F (90°C) oven while you finish the batch.
  • No buttermilk? Use 1 cup milk + 1 tablespoon lemon juice or vinegar. Let it sit for 5 minutes before using.
  • Add-ins: Fold in blueberries, chopped pecans, or even a swirl of cinnamon sugar for extra flair.
