Ingredients

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ tsp salt
- 2 tsp baking powder
- ½ cup vegetable oil
- 1 egg
- ⅓ cup milk
- 1 tsp vanilla extract
- ⅓ cup brown sugar
- ¼ cup all-purpose flour
- ½ tsp cinnamon
- 3 tbsp unsalted butter, cold and cubed
- ½ cup powdered sugar
- 1–2 tsp milk
- ½ tsp vanilla extract
Instructions:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix flour, sugars, salt, and baking powder. In a separate bowl, whisk oil, egg, milk, and vanilla. Combine wet and dry ingredients—do not overmix.
- In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter with a fork until crumbly.
- Fill muffin cups ¾ full and sprinkle with streusel topping.
- Bake for 20–22 minutes, until golden and a toothpick comes out clean.
- Optional glaze: Mix powdered sugar, milk, and vanilla. Drizzle over cooled muffins.
Serving Suggestion:
- Serve warm with a latte or cup of black coffee for the ultimate cozy snack.
- Use room temperature egg and milk for even mixing.
