Coffee Cake Muffins

These Coffee Cake Muffins are soft, buttery, and topped with a crumbly cinnamon streusel that's simply irresistible. Perfect for breakfast, brunch, or a cozy afternoon treat with a cup of coffee. They're easy to make and full of that classic coffee cake flavor in handheld muffin form!

Ingredients
For the Muffins:
For the Streusel Topping:
  • ⅓ cup brown sugar
  • ¼ cup all-purpose flour
  • ½ tsp cinnamon
  • 3 tbsp unsalted butter, cold and cubed
Optional Glaze:
  • ½ cup powdered sugar
  • 1–2 tsp milk
  • ½ tsp vanilla extract

Instructions:
  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, sugars, salt, and baking powder. In a separate bowl, whisk oil, egg, milk, and vanilla. Combine wet and dry ingredients—do not overmix.
  3. In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter with a fork until crumbly.
  4. Fill muffin cups ¾ full and sprinkle with streusel topping.
  5. Bake for 20–22 minutes, until golden and a toothpick comes out clean.
  6. Optional glaze: Mix powdered sugar, milk, and vanilla. Drizzle over cooled muffins.

Serving Suggestion:
  • Serve warm with a latte or cup of black coffee for the ultimate cozy snack.
