Ingredients
- 12 oz rotini or penne pasta
- 2 cups cooked, shredded chicken (rotisserie works great!)
- 1 packet (1 oz) ranch seasoning mix
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked, crumbled bacon (about 6 slices)
- 2 green onions, sliced (optional for garnish)
- Salt and pepper to taste
- Olive oil or non-stick spray (for greasing)
Instructions:
- Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large bowl, mix together cream of chicken soup, sour cream, milk, and ranch seasoning until smooth.
- Stir in shredded chicken, half of the cheddar and mozzarella, and cooked pasta.
- Transfer mixture to the prepared baking dish. Sprinkle the remaining cheese on top, followed by crumbled bacon.
- Bake uncovered for 25–30 minutes or until bubbly and golden.
- Garnish with sliced green onions before serving if desired.
