Prep Time: 25 minutes
Bake Time: 10–12 minutes
Cooling Time: 30 minutes
Total Time: ~1 hour 10 minutes
Servings: Makes 24–28 cookies
Ingredients:
For the shortbread base:
- 1/2 cup (1 sticks) unsalted butter, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- ¼ teaspoon salt
For the caramel layer:
- 1 (11 oz) bag soft caramels
- 2 tablespoons heavy cream
For the chocolate layer:
- 1½ cups milk chocolate chips or chopped chocolate bars
- 1 teaspoon vegetable oil (for smoother chocolate, optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and powdered sugar until light and fluffy. Add vanilla. Mix in flour and salt just until combined.
- Roll dough into 1-inch balls and flatten slightly on the baking sheet, or use a round cookie cutter for uniformity.
- Bake for 10–12 minutes or until edges are just starting to turn golden. Let cool completely.
- Melt caramels and heavy cream together in a microwave-safe bowl in 30-second bursts, stirring until smooth. Spoon a layer of caramel on each cookie. Let set.
- Melt chocolate (and oil if using) in the microwave or double boiler until smooth. Spoon or drizzle over caramel layer. Let set completely before serving.
Serving Suggestion:
- Serve as-is, or chill slightly for a firmer candy-like texture. They’re great with a glass of milk or a hot coffee!
Tips:
- Use a fork to create a “Twix bar” pattern in the chocolate.
- Chill the cookies between layers to speed up setting.
- Store in an airtight container at room temp for 3–4 days or freeze for up to 2 months.
