BLUEBERRY LEMON FRITTERS
These Blueberry Lemon Fritters are golden, crispy, and bursting with juicy blueberries and bright lemon flavor. Made with a simple batter and fried to perfection, they’re finished with a sweet lemon glaze that takes them over the top. Ingredients:
Fritters:
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon (optional)
- 1 egg
- ⅓ cup milk
- 1 tsp vanilla extract
- Zest of 1 lemon
- ¾ cup fresh blueberries
- Vegetable oil (for frying)
Glaze:
- 1 cup powdered sugar
- 1–2 tbsp lemon juice
- Zest of ½ lemon (optional)
Instructions:
- Heat oil in a deep pan or skillet to 350°F (175°C).
- In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix egg, milk, vanilla, and lemon zest.
- Combine wet and dry ingredients to form a thick batter. Fold in blueberries gently.
- Drop spoonful of batter into hot oil. Fry until golden brown, 2–3 minutes per side. Drain on paper towels.
- Whisk glaze ingredients until smooth and drizzle over warm fritters.
Serving Suggestion:
- Serve warm with coffee or iced tea for breakfast, brunch, or an afternoon treat.
