BLUEBERRY LEMON FRITTERS

These Blueberry Lemon Fritters are golden, crispy, and bursting with juicy blueberries and bright lemon flavor. Made with a simple batter and fried to perfection, they’re finished with a sweet lemon glaze that takes them over the top. A delightful treat for summer brunches, weekend breakfasts, or whenever you need a fruity fried indulgence!

Ingredients:

Glaze:
  • 1 cup powdered sugar
  • 1–2 tbsp lemon juice
  • Zest of ½ lemon (optional)

Instructions:
  1. Heat oil in a deep pan or skillet to 350°F (175°C).
  2. In a bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix egg, milk, vanilla, and lemon zest.
  4. Combine wet and dry ingredients to form a thick batter. Fold in blueberries gently.
  5. Drop spoonful of batter into hot oil. Fry until golden brown, 2–3 minutes per side. Drain on paper towels.
  6. Whisk glaze ingredients until smooth and drizzle over warm fritters.

Serving Suggestion:
  • Serve warm with coffee or iced tea for breakfast, brunch, or an afternoon treat.

  • Don’t overcrowd the pan when frying.
  • Use fresh, firm blueberries to avoid sogginess.
