Grilled Street Corn (Elote-Inspired)
This easy version of Mexican-style street corn features grilled corn slathered with a creamy, tangy topping, sprinkled with cheese and chili powder. It’s bold, messy (in a good way), and always a summer favorite!

Servings: 4-6
Ingredients:
- 4–6 ears fresh corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled Cotija cheese (or feta/parmesan)
- 1 tsp chili powder (or Tajín seasoning)
- 1 tbsp lime juice
- Chopped cilantro and lime wedges, for garnish
- Salt to taste
Instructions:
- Preheat grill to medium-high. Grill corn for 10–12 minutes, turning occasionally, until charred in spots.
- In a bowl, combine mayo, sour cream, lime juice, and a pinch of salt.
- Brush the hot corn with the mayo mixture. Sprinkle with cheese, chili powder, and cilantro.
- Add a squeeze of lime and serve immediately!
Serving Suggestion:
- Serve alongside burgers, hot dogs, or grilled skewers. It also works great as a side to tacos or BBQ.
Tips:
- You can cut the corn off the cob after grilling and serve it as elote salad.
- Add garlic powder or smoked paprika to the mayo mix for extra flavor.
