This Lemon Garlic Shrimp Pasta is a bright and flavorful summer dinner packed with juicy shrimp, zesty lemon, and fresh herbs. It’s quick, satisfying, and perfect for warm nights when you want something delicious without heating up the kitchen for long.

Ingredients:
  • 8 oz spaghetti or linguine
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • ¼ teaspoon red pepper flakes (optional)
  • Salt & pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Freshly grated Parmesan (optional)
Instructions:
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Reserve ½ cup of pasta water, then drain.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 30 seconds. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side, until pink and cooked through.
  3. Add the cooked pasta to the skillet with the shrimp. Toss in lemon zest and juice. If needed, add a bit of reserved pasta water to loosen the sauce.
  4. Sprinkle with parsley and Parmesan (if using). Serve immediately with extra lemon wedges.

Tips:
  • Add halved cherry tomatoes or spinach for a veggie boost.
  • Swap shrimp for grilled chicken or tofu if preferred.
  • Great served warm or cold as a pasta salad!
