Ingredients
Soft Cookie Dough
- 3½ tbsp unsalted butter, melted
- 2½ tbsp brown sugar
- 2½ tbsp granulated sugar
- ¼ tsp vanilla extract
- 1 large egg
- ⅓ cup all-purpose flour
- ¼ cup cake flour
- ¼ tsp baking soda
- ¼ tsp baking powder
Filling
- 1 tbsp strawberry cream cheese
- 2 tsp Nutella
Topping
- ¾ cup non-dairy whipping cream
- Decorative fondant (optional)
Instructions
- Melt the butter using a microwave, double boiler, or pan. Let it cool slightly.
- In a bowl, mix melted butter, brown sugar, granulated sugar, and vanilla extract just until combined.
- Add the egg and mix on medium speed until the batter looks slightly lighter in color.
- Add all-purpose flour, cake flour, baking soda, and baking powder. Mix just until no dry flour remains. At this stage, you can also add flavor powders or extracts if desired.
- Portion the dough: 50 g (about 3½ tbsp) cookie dough, 10–15 g (2–3 tsp) filling
- Place the filling inside, round gently, and set into a cupcake pan.
- Chill the filled dough in the refrigerator for 30 minutes.
- Preheat the oven to 340°F (170°C). Bake for 15 minutes.
- Whip the non-dairy whipping cream until fluffy. Add food coloring if desired.
- Once the cookie cups are completely cool, decorate with whipped cream and fondant.
- Ready to serve!
