COOKIE DOUGH ICE CREAM SANDWICHES
These Cookie Dough Ice Cream Sandwiches are the ultimate frozen treat for cookie lovers! Made with safe-to-eat edible cookie dough and filled with your favorite ice cream, they’re rich, creamy, and perfect for summer or anytime you want a nostalgic dessert. No oven needed — just chill, slice, and enjoy!

Servings: Makes 6–8 sandwiches
Ingredients:
For Edible Cookie Dough:
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 tsp vanilla extract
- 2 tbsp milk (more if needed)
- 2 cups heat-treated all-purpose flour*
- 1½ cups mini chocolate chips
- ½ tsp salt
- *To heat-treat flour: microwave it in a bowl for 1–2 minutes or bake at 350°F (175°C) for 5 minutes to kill any bacteria.
For Assembly:
- 1½ quarts vanilla ice cream (or your favorite flavor), slightly softened
Instructions:
- In a large bowl, cream together the butter and sugars. Mix in vanilla, salt, and milk. Gradually stir in heat-treated flour until combined. Fold in chocolate chips.
- Line an 8x8-inch or 9x9-inch square pan with parchment. Press half of the cookie dough into the bottom of the pan in an even layer.
- Spread softened ice cream evenly over the cookie dough base. Freeze for 10–15 minutes until slightly firm.
- Press the remaining cookie dough over the ice cream layer. Cover and freeze for 2–3 hours, or until completely firm.
- Lift out of the pan using parchment, cut into squares, and enjoy immediately or store wrapped in the freezer.
Serving Suggestions:
- Roll the edges in extra mini chocolate chips or sprinkles for a fun touch.
- Serve with chocolate drizzle or whipped cream.
Tips:
- Let the ice cream soften just enough to spread — not melt.
