These stovetop candied nuts are deliciously crunchy, sweetened without sugar, and ready in minutes. Made with your favorite mixed nuts and a sugar-free sweetener, they’re the perfect keto-friendly or diabetic-friendly snack. Ideal for holidays, charcuterie boards, or everyday munching.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: Makes about 2 cups of candied nuts
Ingredients:
- 2 cups mixed raw nuts (e.g., pecans, almonds, walnuts, cashews)
- 3 tbsp unsalted butter
- ⅓ cup granulated sugar-free sweetener
- ½ tsp cinnamon (optional)
- Pinch of sea salt
- 1 tsp vanilla extract
Instructions:
- In a large skillet over medium heat, melt butter.
- Stir in the sugar-free sweetener, cinnamon (if using), salt, and vanilla. Cook for 1–2 minutes until sweetener begins to dissolve and thicken slightly.
- Add the nuts and stir constantly for 5–7 minutes until they’re fully coated, glossy, and the mixture starts to caramelize and stick.
- Immediately transfer nuts to a parchment-lined tray or plate. Spread them out to cool and harden, separating with a fork as needed.
Serving Suggestions:
- Use as a topping for yogurt or oatmeal
- Toss on salads for a crunchy, sweet twist
- Pack in jars for gifting or store for on-the-go snacking
Tips:
- Allulose is great for a smooth, caramel-like texture; erythritol may crystallize slightly but still tastes great.
- Stir constantly to avoid burning.
- Let cool fully before storing in an airtight container (keeps for 1–2 weeks).
