These Cookie Dough Frosting Cupcakes are a dream come true for cookie dough lovers! Ingredients:
For the Vanilla Cupcakes:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- ½ cup whole milk
For the Cookie Dough Frosting:
- ½ cup unsalted butter, softened
- ⅓ cup light brown sugar, packed
- 1 cup powdered sugar
- 2 tbsp milk or heavy cream
- ½ tsp vanilla extract
- ½ cup heat-treated all-purpose flour
- ½ cup mini chocolate chips
Instructions:
Bake the Cupcakes:
- Preheat the oven to 350°F (175°C). Line a cupcake pan with liners.
- In a medium bowl, whisk flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy.
- Add eggs and vanilla, mixing well.
- Alternate adding flour mixture and milk until smooth.
- Fill liners 2/3 full and bake 18–22 minutes. Cool completely.
Make the Cookie Dough Frosting:
- To heat-treat flour: Microwave in a bowl for 1 minute (stirring halfway) or bake at 350°F for 5 minutes. Cool.
- Cream butter and brown sugar until fluffy.
- Mix in powdered sugar, vanilla, and milk until smooth.
- Fold in cooled flour and mini chocolate chips.
Assemble:
- Pipe or spread the cookie dough frosting generously onto cooled cupcakes.
- Optional: Top with extra mini chips or a tiny cookie for garnish!
Serving Suggestion:
- Serve slightly chilled or at room temp. Great with a cold glass of milk or iced coffee!
