Whether you’re planning a busy weeknight meal or prepping ahead for Taco Tuesday, these fajitas are a healthier alternative to skillet versions and come together in just 30 minutes. Serve them with warm tortillas, fresh guacamole, and your favorite toppings for a satisfying and customizable Tex-Mex experience at home.

Ingredients

Instructions:
  1. Preheat oven to 375° F. Prepare a casserole dish with non-stick cooking spray and set aside.
  2. Cut chicken breast into smaller slices.
  3. Place chicken, drained caned tomatoes, onion, and peppers into a large mixing bowl. Add oil and lime juice and toss to coat. Add fajita seasoning and toss again to coat.
  4. Add all ingredients to your prepared casserole dish and bake for 30-40 minutes until chicken is cooked through and veggies are tender.
  5. Top with cheese and back into the oven for 10 minutes or until cheese is melted. Serve and enjoy!

Serving Suggestions:
  • Serve the baked fajitas with warm flour or corn tortillas, a side of Mexican rice or cilantro-lime rice, and a dollop of sour cream or Greek yogurt.
  • Add a topping bar with shredded lettuce, diced tomatoes, jalapeños, shredded cheese, guacamole, and salsa for a fun family-style meal.
  • For a low-carb option, serve over cauliflower rice or in lettuce wraps.
Tips:
  • Slice chicken and veggies evenly to ensure they cook at the same rate.
  • Drain caned tomatoes very well. If you didn’t want your tortilla too soggy so draining well will help with that.
  • Don’t overcrowd the pan — if doubling the recipe, use two sheet pans for even roasting.
  • Marinate the chicken in the fajita seasoning for 30 minutes (optional) to enhance flavor.
  • Make it dairy-free by skipping cheese and using dairy-free toppings.
