Ingredients
For the Crust:
- 1 ½ cups Oreo crumbs
- 5 tbsp unsalted butter, melted
For the Filling:
- 3 (8 oz) blocks cream cheese, softened
- 1 cup granulated sugar
- 1 cup unsweetened shredded coconut
- 3 large eggs
- ½ cup sour cream
- ½ cup coconut milk, full-fat
- 1 tsp coconut extract
- 1 tsp vanilla extract
For the Ganache Topping:
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
For Garnish (optional):
- Toasted coconut flakes
- Extra chocolate shavings
Instructions:
- Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
- Mix Oreo crumbs and melted butter until fully combined. Press evenly into the bottom of the pan. Bake for 10 minutes. Cool while preparing the filling.
- Beat cream cheese and sugar until smooth and fluffy. Add eggs one at a time, mixing well. Stir in sour cream, coconut milk, coconut extract, and vanilla. Fold in shredded coconut.
- Pour filling over the crust. Wrap the bottom of the pan in foil and place it in a water bath. Bake for 55–65 minutes, or until edges are set and the center slightly jiggles.
- Turn off oven and crack the door open. Let cheesecake cool for 1 hour inside, then refrigerate at least 6 hours or overnight.
- Heat cream just to simmering. Pour over chocolate chips and let sit for 2 minutes, then stir until smooth. Spread over chilled cheesecake.
- Sprinkle with toasted coconut flakes and chocolate shavings if desired.
