Total Time: 7½+ hours

Ingredients

For the Filling:
For the Ganache Topping:
For Garnish (optional):
  • Toasted coconut flakes
  • Extra chocolate shavings

Instructions:
  1. Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Mix Oreo crumbs and melted butter until fully combined. Press evenly into the bottom of the pan. Bake for 10 minutes. Cool while preparing the filling.
  3. Beat cream cheese and sugar until smooth and fluffy. Add eggs one at a time, mixing well. Stir in sour cream, coconut milk, coconut extract, and vanilla. Fold in shredded coconut.
  4. Pour filling over the crust. Wrap the bottom of the pan in foil and place it in a water bath. Bake for 55–65 minutes, or until edges are set and the center slightly jiggles.
  5. Turn off oven and crack the door open. Let cheesecake cool for 1 hour inside, then refrigerate at least 6 hours or overnight.
  6. Heat cream just to simmering. Pour over chocolate chips and let sit for 2 minutes, then stir until smooth. Spread over chilled cheesecake.
  7. Sprinkle with toasted coconut flakes and chocolate shavings if desired.

Serving Suggestions:
  • This cheesecake tastes even better after chilling overnight, allowing the flavors to meld and the texture to set perfectly.
  • Just before serving, add a sprinkle of toasted coconut flakes and a drizzle of warm chocolate sauce for a bakery-style finish.
  • The tartness of raspberries or strawberries balances the richness beautifully.
  • A dollop of freshly whipped cream lightens each bite and adds a nice contrast to the dense, creamy cheesecake.
  • A hot cup of coffee or espresso cuts through the richness and enhances the chocolatey depth.
Tips:
  • For clean slices, warm your knife under hot water and wipe clean between each cut.
  • Toast the coconut in a dry skillet for a deeper nutty flavor.
  • Ensure cream cheese is room temperature for smooth blending.
