Ingredients:
For the Shrimp:
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika (or smoked paprika)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for spice)
  • Juice of ½ lemon
For the Salad:
  • 6 cups mixed greens (such as arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 avocado, sliced
  • ½ small red onion, thinly sliced
  • ¼ cup feta cheese or goat cheese, crumbled (optional)
  • ¼ cup fresh herbs (such as parsley, cilantro, or basil)
For the Dressing:
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice (or lime)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper, to taste
Instructions:
  1. In a bowl, toss shrimp with olive oil, garlic, paprika, salt, pepper, red pepper flakes, and lemon juice. Let sit for 10–15 minutes while you prep the salad.
  2. In a small jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
  3. Preheat your grill (or grill pan) to medium-high. Grill shrimp for about 2–3 minutes per side until pink and slightly charred. Remove from heat.
  4. On a large platter or bowl, layer the mixed greens, cherry tomatoes, cucumber, avocado, red onion, and herbs.
  5. Arrange the grilled shrimp on top. Drizzle with dressing and sprinkle with feta or goat cheese if using.
  6. Serve immediately!

  • Soak wooden skewers for 30 minutes if using to prevent burning on the grill.
  • Don’t overcook the shrimp — they cook very quickly and stay juicy if removed promptly.
