For the Salad:
- 6 cups mixed greens (such as arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1 avocado, sliced
- ½ small red onion, thinly sliced
- ¼ cup feta cheese or goat cheese, crumbled (optional)
- ¼ cup fresh herbs (such as parsley, cilantro, or basil)
For the Dressing:
- ¼ cup olive oil
- 2 tablespoons fresh lemon juice (or lime)
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper, to taste
Instructions:
- In a bowl, toss shrimp with olive oil, garlic, paprika, salt, pepper, red pepper flakes, and lemon juice. Let sit for 10–15 minutes while you prep the salad.
- In a small jar or bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
- Preheat your grill (or grill pan) to medium-high. Grill shrimp for about 2–3 minutes per side until pink and slightly charred. Remove from heat.
- On a large platter or bowl, layer the mixed greens, cherry tomatoes, cucumber, avocado, red onion, and herbs.
