There’s something timeless about grilled skewers sizzling over open flames during summer. These BBQ Chicken Skewers are a flavorful twist on a classic American cookout favorite. The chicken is marinated in a zesty, smoky blend of spices like cumin, paprika, and garlic, then grilled with vibrant bell peppers, red onions, and zucchini for a colorful and satisfying dish. Perfect for backyard BBQs, picnics, or weeknight dinners, these skewers offer tender, juicy chicken with lightly charred edges and a subtle citrus kick. It’s a dish that brings people together around the grill—and it’s easy to customize for your favorite veggies or spice level.

Servings: 4

Ingredients:
  • 1 lb chicken breast or thighs, cubed
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp black pepper
  • Salt to taste
  • 1 red bell pepper, 1 green bell pepper, 1 red onion, 1 zucchini – all chopped
  • Skewers (wooden or metal)
Instructions:
  1. Mix olive oil, lemon juice, and all the spices in a bowl to create a marinade.
  2. Add chicken pieces and coat well. Cover and marinate in the fridge for at least 1 hour (up to 24 hours for deeper flavor).
  3. Thread the marinated chicken and vegetables alternately onto skewers.
  4. Grill on medium-high heat for 10–12 minutes, turning occasionally, until the chicken is cooked through and lightly charred.

Serving Suggestion:
  • Serve over fluffy basmati rice or with warm pita and a drizzle of garlic yogurt sauce or BBQ sauce. 
  • Pair with a fresh cucumber salad or grilled corn.
Tips:
  • Soak wooden skewers in water for 30 minutes beforehand to prevent burning.
  • Add a touch of honey or pomegranate molasses to the marinade for a subtle sweetness.
