Ingredients:
- 1½ pounds new red potatoes, washed and quartered

- 1 teaspoon paprika (optional, for color and flavor)
- 1 tablespoon fresh rosemary or thyme (or 1 teaspoon dried herbs)

Instructions:
- Preheat your oven to 425°F (220°C).
- Cut the potatoes into evenly sized quarters (halves if very small).
- Place them in a large bowl and drizzle with olive oil.
