Prep Time: 10 minutes
Cook Time: 30–35 minutes
Total Time: 40–45 minutes
Servings: 4–6

Ingredients:
  • 1½ pounds new red potatoes, washed and quartered
  • 2–3 tablespoons olive oil
  • 1½ teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder (or 2 cloves fresh minced garlic)
  • 1 teaspoon paprika (optional, for color and flavor)
  • 1 tablespoon fresh rosemary or thyme (or 1 teaspoon dried herbs)
  • Optional: Parmesan cheese, lemon juice, or chopped parsley for garnish
Instructions:
  1. Preheat your oven to 425°F (220°C).
  2. Cut the potatoes into evenly sized quarters (halves if very small).
  3. Place them in a large bowl and drizzle with olive oil.
  4. Season with salt, pepper, garlic powder, paprika (if using), and herbs.
  5. Toss everything well to coat evenly.
  6. Spread the potatoes out on a large baking sheet in a single layer (use parchment paper or foil for easy cleanup).
  7. Roast for 30–35 minutes, stirring halfway through, until golden brown and crispy.
  8. Remove from the oven.
  9. Optionally sprinkle with grated Parmesan, a splash of lemon juice, or fresh parsley before serving.
  10. Serve hot and enjoy!

Tips for Success:
  • Even Cutting: Cut potatoes to a similar size to ensure even cooking.
  • Crispier Potatoes: Avoid crowding the baking sheet — if necessary, use two pans.
  • Flavor Boost: Add a squeeze of fresh lemon juice or a dash of balsamic vinegar right after roasting.
  • Storage: Leftovers can be stored in the fridge for up to 3 days and reheated in the oven to re-crisp.
