- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 2 cups grated carrots
- 1 1/2 tsp ground cinnamon
- 1/2 cup + 2 tbsp butter (measured before browning)
- 8.8 oz cream cheese (room temperature)
- 3/4 cup powdered sugar / icing sugar (flexible amount)

Additional for decoration:

For the muffins:
- Cook the unsalted butter until it browns (brown butter), remove from heat, and let it cool until it reaches room temperature.

- Add the eggs and vanilla extract, stirring until incorporated.
- Sift the flour, baking powder, baking soda, ground cinnamon, and salt. Gently fold using a spatula until about 80% mixed, to avoid overmixing.
- Add the grated carrots and fold until evenly distributed.
- Pour into muffin paper liners, filling them about 50% full, the batter will rise significantly while baking.
- Bake in an oven at 325°F (160°C), top and bottom heat, on the middle rack for 20–22 minutes. Check for doneness with a toothpick; if it comes out clean, they are done. Let cool completely to room temperature before frosting.
- Cook the butter until it browns (brown butter), remove from heat, and let it cool until it reaches room temperature, then place it in the freezer until it solidifies.
- Fold the room-temperature cream cheese with the powdered sugar until smooth.
- Add the solidified brown butter and vanilla extract. Mix for about 1 minute until fluffy.
- In a separate bowl, whip the dairy whipped cream until stiff peaks.
- Fold the whipped cream mixture into the brown butter cream cheese mixture. Stir just briefly so the cream doesn't separate.
- Pipe or spread the brown butter cream cheese on top of the completely cooled muffins, smoothing it out into a disc shape.
- Roll the edges of the muffin in the mixture of chopped toasted walnuts or pecans.
- Reserve a small amount of cream, tint a portion orange (for the carrot) and green (for the stem), and pipe a small carrot shape on top of the center of the cream. Done!
